A tiny mini PC with an 8-core/16-thread AMD 8745H CPU, which retails for $343 (or €379) as a bare-bone unit, and stays below $550, even after adding 48GB of RAM and 1TB of storage. We saw in the comments that folks recommended the V-Color 96GB kit. The kit came with two 48GB ECC UDIMMs for 96GB total. We paid $399 for the two DIMM kit. This is more than many non-ECC UDIMMs, but since the 32GB Micron ECC UDIMMs are $220 each, this V-Color kit offers more capacity at a lower cost.
